Bruschetta with Grilled Red Peppers / Goats Cheese
Ingredients:
- 2 Cuisine de France Petit Pains
- 3 large red peppers
- Olive oil
- 225g goats cheese peeled and crumbled
- 60g roasted pine nuts
- 1 clove garlic
Heat the grill and grill the peppers, skin side uppermost, until the skin is black and blistered.
Cover with cling film for 10 minutes and then peel off the skin and cut into strips. Cut the petit pain lengthwise. Brush lightly with olive oil and place under a grill until light brown. Rub each slice with garlic. Place the crumbled goats cheese on the bread and cover with red peppers. Sprinkle with pine nuts.
